We will start cleaning the inside of the squid and cutting them into pieces, also taking advantage of the tentacles. We often chop the onion, green pepper and garlic. In a thick-bottomed casserole add the oil to heat, once hot add the vegetables and stir-fry until golden brown for a few minutes. Add the squid and fry them a little until we see them "curled up" and salted.

Add the paprika, stir and then add the homemade fried tomato sauce, the bay leaf and pour the white wine, letting it cook for about three minutes to evaporate the alcohol. Later we add the water or the fish stock if we have it. Cook for half an hour, rectify salt and serve hot.
