Almost every time I make dishes with an exotic touch, I go to meat or poultry. Sometimes I cheer up with fish but I almost never make curry dishes with vegetables. That's why I loved preparing this so simple recipe for spinach curry with prawns, and check the great flavor that Indian spices bring to the plate.

Ingredients for 4 people
- 24 prawns, 300 gr of spinach, 1 onion, 1 can of coconut milk, 1 dash of brandy, 2 tablespoons of curry powder, 1 lime and rice for the garnish
How to make a simple spinach curry with prawns
First of all, we are going to peel the prawns, and we will remove all the essence from their shells and especially from their heads. We put them in a wide pan with a tablespoon of olive oil and heat them, watching how they change color from bluish gray to deep orange. While they are being made, we crush them with a spoon to release their juices.
We add a squirt of brandy and flambé them carefully. Then we add the can of coconut milk on them, and let the whole cook for about five minutes. We sneak in and reserve our flavored coconut milk. In a large casserole, slowly poach a very chopped onion, and when it is soft, add coconut milk and curry powders, stirring well.
We add the spinach leaves to the saucepan, although it seems that they do not fit, and we cook them in the coconut milk with curry, seeing how they are decreasing in size, stirring continuously until they are straight and reduced. Let cook 5 minutes and they will be ready, and full of aromas.
It is time to add the juice of half a lime and a few touches of the zest so that the acid and fresh aroma cheers us up. Finally, we put in the pan the peeled shrimp tails and let them take a minute, just until the color changes, putting out the fire and serving immediately.
