We are used to using lettuce, spinach, arugula, canons and little else in our salads and maybe the Chinese cabbage sounds a bit like that, precisely, to Chinese, but this chinese coleslaw it is a wonder. It is seasoned with a vinaigrette with oriental nuances that feels like a ring to the finger and that gives it a spectacular flavor.
Very easy to prepare, this chinese coleslaw We can solve a light dinner or a side dish in 15 minutes or less. Its strong point is that it can be prepared in advance as it is a salad that earns a lot with rest. We recommend preparing it the night before and leaving it in the fridge until the moment of consumption. Do not worry that its texture will not be altered, quite the opposite. Do you cheer up?

Prepare the vinaigrette in a deep and wide bowl that is not metallic (so that vinegars do not react). We pour in it oils, vinegars, soy sauce, sesame seeds and pepper to taste. We beat well with some metal rods until emulsified.
We remove the outer green leaves of the cabbage to be alone with the plants that are more tender. Cut in fine julienne, wash and dry well. Peel the carrots and grate them or cut them into julienne with a knife. We add both vegetables to the vinaigrette along with the corn and the bean sprouts and the corn. We stir well so that all the vegetables they permeate the vinaigrette. Let stand before serving.
