Crispy Quesadillas with chicken, papaya and provolone. Recipe for use

It must be recognized that quesadillas are a great invention. With wheat tortillas at home you can improvise a dinner or a quick lunch without complications, and they are perfect to reuse leftovers or get creative by combining ingredients. You will know that when we make baked chicken at home, I always try to use meat in other recipes, how are you? Crispy chicken, papaya and provolone quesadillas.

I used to make quesadillas by mounting two tortillas on top of each other, but now I prefer the method of folding them creating half moons. This recipe is simple but it works deliciously well because we use a good melting cheese mixed with the rest of the ingredients, the fresh touch of papaya and cooking in a pan without being very scratchy with the oil. You cannot deny that you are much richer with that crunchy layer that hides the melted cheese.

  • Roasted or cooked chicken (approximately) 150 g
  • Chili pepper or red hot pepper 1
  • Hot green pepper 1
  • Purple onion (half) 1
  • Papaya a slice, ripe
  • Provolone cheese 60 g
  • Garlic granulated to taste
  • Lima 1
  • Ground black pepper
  • Salt
  • Extra virgin olive oil

How to make crispy chicken, papaya and provolone quesadillas

The ideal is to have roasted chicken leftovers ready (the best to reuse in other recipes), but we can always make grilled or bake a breast or some contramuslos for the occasion. Chop the meat or cut into thin strips and place in a bowl or bowl.

Wash and thinly chop the hot peppers, discarding the seeds, and chop the onion or cut into fine julienne. Remove the papaya skin, discard the seeds and cut into small tacos. Finely chop the cheese provolone

Mix all the ingredients with the chicken, add a little granulated garlic, lime or lemon juice and salt and pepper slightly. Spread on tortillas, placing the mixture in one of the halves without reaching the edges, and close carefully forming half moons.

Heat a generous amount of olive oil in a good nonstick skillet and cook the quesadillas on both sides until they are golden and crispy. Drain on paper towels to avoid excess fat and serve immediately.
